January 4th, 2012 - Salvatore Moscato Appointed Executive Chef of the Hilton Sedona Resort & Spa
SEDONA, Ariz. – December 31, 2011 – Hilton Sedona Resort & Spa, located in the world renowned Red Rock country, announced the appointment of Salvatore Moscato as the resort’s executive chef. In his new position Chef Salvatore will oversee the resort’s banquet dining options as well as the signature restaurant, Grille at ShadowRock offering a menu of fresh regional fare for breakfast, lunch or dinner.
Chef Salvatore began his culinary training at a very young age in his hometown of Vittoria, Sicily, cooking traditional Italian dishes with his great-grandmother. He often helped his mother and father cultivate a variety of fruits and vegetables, while assisting his uncle in the family’s winemaking business. This upbringing taught Chef Salvatore to appreciate traditional approaches to dishes and cook with available seasonal ingredients. At the age of 19 Salvatore left for New York City to pursue his passion for food working at the renowned Casa Dante in Jersey City and eventually opening his own Trattoria as co-owner.
“To me, food is an exploration,” said Chef Salvatore. “Wherever I go I let the local ingredients and traditional cooking techniques of the region to inspire me. My aspiration is to take these time-honored elements and give them my own essence.”
Not one to forget his island roots and yearning for a more leisurely environment, Chef Salvatore left the Northeast for the beautiful island of Puerto Rico where he worked at a popular island restaurant specializing in local “Criollo” cuisine and Italian dishes. Salvatore went on to join the Hilton family as Sr. Sous Chef at the Embassy Suites San Juan Hotel and Casino, and ultimately Executive Chef at Embassy Suites Dorado del Mar Beach and Golf Resort. Salvatore speaks three languages including his native Italian, English, and Spanish.
